Underground Signature Gin starts as clean pure wheat spirit, having been filtered using Underground's Patented Filtration Method, the unique process of "Sub-Micron, Sub-Zero filtration" using cold temperatures and fine filters. It then is the maceration, vapour infusion and tincture techniques which allow our botanicals to shine brightly.

- 60ml Underground Signature Gin
- 75ml Freshly squeezed Peach Puree
- 35ml Freshly squeezed Apple Juice
- Shake vigorously together with ice and strain into an old-fashioned glass over ice.
- Wedge of fresh Peach to garnish.
This gin has a juniper aroma with soft spicy notes from the Tasmanian Pepperberry which, in turn, are supported by the black pepper notes. The taste delivers hints of the Australian native Lemon Myrtle giving a citrus edge and the Australian River Mint adds a freshness.
Overall there is a wonderful mouthfeel and a fresh carrot-like appeal.
