Grown at the foothills of Meron Mountain, in the Upper Galilee region, at 840 meters elevation, several wineries turn to Josef’s vineyard to harvest its wine grapes, to round off their more prestigious wines due to their rare combination of layers of basalt, Terra Rosa and chalk in one terrain. The residents, to whom the attributes of the land were already known from Talmudic times, named the village - Sifsaf - in Aramaic, a region where fruit mature late.
The wines were made using only the "free run" method (the first juice to flow from the grapes) and fermented in stainless steel tank on cold temperatures.
